ROASTED RIB ROAST

INGREDIENTS:
1-8 bone rib roast
3 cloves garlic minced
2 whole yellow onions
2 TBSP chopped fresh thyme
2 TBSP chopped fresh rosemary
Salt and pepper to taste
2 cups red wine
2 cups dark chicken or veal stock
2 TBSP unsalted butter
 
METHOD:
Place rib roast in large roasting pan. Rub minced garlic on all of roast. Season roast with fresh herbs and salt and pepper. Thinly slice onions and place on top of roast.  Roast in oven at 350° for 2 hours. You want internal temperature to reach 115°. When finished, remove from oven. Clear any remaining onions off and remove meat. Allow meat to rest for 10 minutes on cutting board.  Return pan to stove and heat onions in pan with drippings. Add wine and bring to boil. Add stock and bring to boil. Turn off flame and whisk in butter. Strain and serve with rib roast.
