SEARED PORK WITH CRANBERRY-WALNUT CRUST
INGREDIENTS:
1-3 lb. package pork tenderloin
3 oz. olive oil
Salt and pepper to taste
1 package frozen cranberries (approx 1 lb.)
1 cup toasted walnuts
2 shallots
1/2 cup brown sugar
1 cup cranberry juice
2 TBSP butter
1/2 stick cinnamon
1/4 cup orange juice
Salt and pepper to taste
METHOD:
Clean pork tenderloin of any fat. Cut into 2 oz. medallions and reserve.
In medium sauce pot place butter and brown sugar and cook over medium flame fro 2-3 minutes. Add shallots, cinnamon and sauté for 2-3 minutes. Add cranberries, cranberry juice, orange juice and simmer over low flame for 20 minutes or until thickened. Season to taste with salt and pepper. Add chopped walnuts.
Season pork with salt and pepper and sear in a large skillet with olive oil. Place pan in oven at 350° for 5-8 minutes. Remove and top each medallion with cranberry-walnut topping.
