YCH Recipe 7.8

Break The Rain With Some Grilling!
Recipe for July 8th, 2007 - Serves 4 people

 Ingredients

HALIBUT:
-4- 6 oz. filets of fresh halibut
-1 TBSP fresh chopped thyme
-1/2 oz. extra virgin olive oil
-Salt and pepper to taste

 
RATATOUILLE:
-1 small eggplant
-1 each medium sized piece of zucchini, yellow squash and red pepper
-2 shallots, finely minced
-2 cloves garlic, finely minced
-1 TBSP each of fresh chopped oregano, rosemary and Italian parsley
-4 oz extra virgin olive oil
-1 small can crushed red tomatoes
-Salt and pepper to taste
-1 tsp. red chili flakes (optional)
-Zest of one lemon

 
METHOD:
-Lay fish in baking dish and cover with thyme and olive oil. Allow to marinate for 1 hour in refrigerator.

-While fish in marinating begin ratatouille. Wash vegetables and place of cutting board. Cut eggplant, zucchini, squash and red pepper into small medium dice and reserve in separate dishes.

-In large sauté pan heat 1oz. olive oil and sauté eggplant until tender, season to taste with salt and pepper. Remove from pan and place in kitchen bowl. Repeat process with remaining vegetables. When all vegetables have been sautéed, heat pan with remaining olive oil and sauté shallots and garlic for 1 minute, add vegetables back into pan and stir. Add tomatoes and fresh herbs. Simmer for 1 minute and add lemon zest and chili flake. Season to taste with salt and pepper. Turn flame off and allow ratatouille to marinate on stove while fish is cooking.

-Remove fish from refrigerator and season with salt and pepper. Place fish on hot grill and cook on each side for 3-4 minutes. Remove from grill and serve with 1 loving spoonful of ratatouille.
