Homemade Snacks

GRANOLA
YIELDS: 2 ½ LBS.

INGREDIENTS:
4 cups Quaker quick oats
1 cup sliced almonds
1 cup dried cherries
1/2 cup golden raisins
1/2 cup corn oil
3/4 cup maple syrup
1/4 cup honey
2 TBSP ground cinnamon
1 TBSP vanilla extract

 

METHOD:
Combine oats and almonds in large bowl and reserve.  Combine corn oil, maple syrup, and honey in separate bowl. Add cinnamon, and vanilla extract. Add oats and almond mixture and mix well. 

Evenly spread on non-stick baking sheet trays. Bake at 300° for 25-30 minutes or until golden brown. Allow to cool. Add raisins and dried cherries.

Note: For this recipe you can also add 2 cups chocolate chips, 4 oz. baked low salt pretzels and 1 cup chopped prunes.

 
POTATO CHIPS:

INGREDIENTS:
4 lb. large Idaho potatoes
1 gallon canola or corn oil
Salt and pepper to taste

 

METHOD:
Wash and peel potatoes. Thinly slice potatoes either using a food processor or a box grater. Place in bowl and rinse under cold water for 20 minutes. Drain and wash the potatoes often. This process rinses all the starch from potatoes.

While potatoes are rinsing place oil in largest pot you have. It is very important to fill the pot no more than half way with oil. Heat oil until 350°. Be careful to regulate oil temperature.

After potatoes have rinsed, lie onto dry and towel and remove any excess water. Remember hot oil and water does not mix well.

Cook potatoes in very small batches until golden brown, roughly 8 -10 chips per batch. When golden brown remove from oil and drain on a dish with lined with several layers of paper towels to soak up any additional oil. Season to taste with salt and pepper.

 
 
TORTILLA CHIPS
INGREDIENTS:

3 packages of 16 count corn tortillas1 gallon corn oil
Salt and pepper to taste 

METHOD:
Cut tortillas into triangles (usually you can 6 to 8 per tortilla) and reserve. 

Heat oil to 350°. Remember the same safety precautions are in effect for this cooking process as with potato chips. Cook small batches of tortillas until golden brown and crispy. Lay on tray with paper towels and season with salt and pepper.
